The Chicken Croquettes (Croquetas de pollo)

A recipe for Chicken croquettes, ideal for using that chicken left over meat from the day before. Requiring only a few ingredients they are argentinian snacks that can be delicious and easy to prepare.


* 1/2 of a chicken, or leftover chicken meat, chopped
* 1 cup milk
* 1/3 cup flour
* 3 tablespoons butter
* 2 egg yolks
* 1 egg
* 2 tablespoons milk
* salt and pepper to taste
* oil necessary for frying
* bread crumbs, amount as needed


1) Melt the butter in a saucepan, add the milk and sifted flour, cook until this white sauce has thickened.

2) Remove from heat and add the minced chicken, season to taste and cook until mixture thickens. Let stand to cool slightly then add the yolks.

3) Powder your hands with some flour, form the croquettes with your floured hands.

In a bowl beat the egg with 2 tablespoons milk. Coat the croquettes with this mixture and then roll them in the breadcrumbs.

4) Preferably using a deep fryer with hot oil, fry the chicken croquettes. Once they have a nice brown color put them over paper towels so that they lose the oil in excess.
